- 1 1/2 cups pecans (toasted in a 350 degree oven for 12-14 minutes)
- 1 cup unsweetened shredded coconut
- 2 tsp. vanilla extract
- 1 tsp. canela (or pumpkin pie spice, more to taste is fine!)
- 1/2 tsp. molasses
- 1/4 tsp. sea salt
- 2 Tbsp. erythritol (powdered, or maple syrup)
- 1 cup raw cashews (soaked a minimum of one hour, up to 4 in fresh water)
- 1/2 cup coconut oil (warmed)
- 1/2 cup pumpkin puree
- 1/2 liquid stevia
- 1/2 cup maple syrup (Lankanto, or any maple syrup, may use part stevia or erythritol)
- 1/4 cup hot water (only if necessary to get the mixture blending)
- 3 Tbsp. lemon juice (makes it taste like cheesecake!)
- 2 tsp. vanilla
- 1/2 tsp. molasses
- 1/4 tsp. sea salt
