- 1/4 cup almond flour
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1 Tbsp. coconut sugar (or other sugar of your choice)
- 1/4 tsp. salt
- 1 egg
- 1 cup coconut milk
- 1/2 tsp. almond extract (or vanilla if you prefer)
- 1 tsp. spice (baking, or spices of your liking: cinnamon, nutmeg, cloves, etc.)
- 1 cup shredded carrot (combined, and shredded coconut, I used about 2/3 cup carrot, 1/3 cup coconut)
