  • 1/4 cup honey (preferably raw)
  • 1 vanilla bean (split and halved, or 1 Tbsp vanilla extract, added later)
  • 2 cinnamon sticks
  • 3 inches ginger (piece of, peeled and cut in pieces)
  • 10 whole cloves
  • 8 green cardamom pods
  • 2 whole anise (stars)
  • 1/2 teaspoon whole black peppercorns
  • 1/2 teaspoon nutmeg (freshly ground)
  • 1/4 teaspoon liquid stevia (or 1/4 cup more honey)
  • 1 teaspoon vanilla extract
