- 2 tsp. apple cider vinegar
- 3/4 cup spelt flour (whole)
- 1/2 cup spelt flour (light)
- 2 tsp. baking powder
- 1 tsp. baking soda
- 1 pinch fine sea salt
- 1 tsp. coffee extract (OR 1 tbsp finely ground coffee)
- 1 tsp. ground cinnamon
- 1/2 tsp. ground ginger
- 1/4 tsp. ground cardamom
- 1/4 tsp. ground nutmeg
- 1 pinch ground cloves
- 2 Tbsp. maple syrup
- 1 Tbsp. coconut oil (melted, + extra for cooking pancakes)
- 1 tsp. vanilla extract
