For some reason I can't rate the 5 stars this recipe deserves. 😟 I have made this wonderful cake several times. It's light, fluffy and delicious. It's always a hit with everyone, you would never believe it's low carb! The only downside is that SO and I are both diabetic and the combination of deliciousness and apples makes it a dangerous food for us. It's so hard to resist overindulgence. The only change I make is to sprinkle cinnamon over the top. I definitely highly recommend!!
