- 1/2 cup mirin
- 4 cloves garlic (grated or finely minced)
- 1 Tbsp. toasted sesame oil

- 1 tsp. curry powder
- 1 Tbsp. Sriracha (depending on your heat preference, can also be omitted altogether if you don’t like spicy)
- 2 tsp. peanut oil (or canola oil)
- 1 tsp. fresh ginger (grated)
- 2 Tbsp. toasted sesame oil
- 3/4 cup full fat coconut milk
- 1 Tbsp. peanut butter
- 1 Tbsp. soy sauce
- 1 Tbsp. agave syrup
- 1 tsp. lime juice
- 1/2 tsp. ground cinnamon
- 2 soba noodles (bundles of)
- 1 large carrot (peeled with a Y peeler to create thin ribbons)
