- 6 ginger (–7 cm, a little under 3 in~about the length of a thumb of, or galangal, peeled and roughly chopped)
- 3 shallots
- 6 cloves garlic
- 2 tsp. shrimp paste (Belacan)
- 3 red chiles (–5 dried, depends on how hot you want it)
- 1 tsp. turmeric powder
- 3 stalks lemongrass
- 1 tsp. tamarind puree
- 2 tsp. ground coriander
- 1 tsp. ground cumin
- 2 candlenuts (or macadamia nuts, optional)
- 1 tsp. sugar
- 1/2 tsp. sea salt
- 3 Tbsp. cooking oil
- 4 cups chicken broth (a little under a liter)
- 1 cup coconut milk
- 1 handful curry leaves (optional)
- 2 chicken breasts (sliced thinly)
- 12 fish balls (or medium sized shrimp)
- bean sprouts (for garnish, optional)
- 8 tofu puffs
- 200 grams chinese noodles (or rice vermicelli, whichever you prefer)
