- 14 oz. full fat coconut milk
- 1/2 tsp. sea salt (more to taste)

Very good soup! I've made it twice and both times it has been a hit in my house. Great flavors and super easy/quick. I always add veggie stock instead of plain water.

Turned out amazing! I used 4 cups of vegetable broth and added whole tomatoes diced in lu of only having one can of diced tomatoes. My family loves and I love making them vegan food that’s tasty for them! One thing I’ll say is watch out for the high saturated fat content with all the coconut milk and oil. My can of coconut milk shows 13g of saturated fat per serving, which one can is equal to five servings so look out!

This pantry recipe is a keeper and a must safe staple! I replaced red quiñoa for the green lentils and scallions for cilantro based on what I had available.
Invited my neighbor over to break bread for the first time and my French roomie who can throw down in the kitchen was raving about the smell when she got home.
Feeling a lil under the weather and the warming garlic and ginger in addition to a red serano (?) chile pepper made it exactly what my body needed today!
So good!!! YUM.
