- 2 lb. sweet potatoes (2 large, peeled and cut into 1 inch cubes)
- 3 cups vegetable stock
- 1/2 cup orange juice (I used blood orange)
- 2 Tbsp. Sriracha
- 1 cup light coconut milk
- sea salt
- freshly ground pepper
- 1 shallot
- 1 1/4 cups black lentils (cooked, *, I used beluga)
- yogurt
- 1 bunch cilantro (chopped)
- 1 handful cashews (toasted and chopped)
