- 3 lb. sweet potatoes
- 1 onion (medium-sized, chopped)
- 2 cloves garlic (minced)
- 1 tsp. coriander seeds (whole, or ground and skip toasting and crushing step)
- 1 tsp. cumin seeds (whole, or ground and skip toasting and crushing step)
- 1/2 tsp. mustard seeds (or ground and skip toasting and crushing step)
- 1 cardamom pod (husk removed)
- 1/2 tsp. black pepper (or white, freshly crushed)
- 1 tsp. ground turmeric
- 1/2 tsp. cayenne pepper
- 1/2 tsp. paprika
- 1 Tbsp. butter oil (such as vegetable)
- 1 tsp. salt (or add to taste)
- 2 Tbsp. neutral oil (such as vegetable, for pan-frying)
