- 1 sugar pumpkin (small, or 1 1/2 cups canned pumpkin)
- 1 onion (small, diced)
- 1 tsp. olive oil
- 10 curry leaves
- 2 cloves garlic (minced)
- 1 tsp. salt
- 2 Tbsp. vegetable broth powder (I used no chick’n flavor)
- 4 cups liquid (I used 2 cups carton coconut milk–unsweetened, and 1 cup water)
- 1/2 tsp. salt (additional, or to taste)
