  • 3/4 cup quinoa (thoroughly rinsed)
  • 1 1/2 cups water
  • 1 teaspoon curry powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon cayenne (or more to taste)
  • 1 pinch sugar (optional)
  • 2 tablespoons butter
  • 1/2 cup onion (chopped)
  • 2 cloves garlic (very finely chopped)
  • 1 tablespoon fresh ginger (finely chopped)
  • 2 1/2 cups vegetable (or chicken broth)
  • 1 tablespoon tomato paste
  • 4 medium carrots (peeled and cut into 1/2-inch pieces)
  • 1 cup red lentils (rinsed)
  • 1 red bell pepper (small, seeded and cut into 1/2-inch pieces)
  • 1 2/3 cups light coconut milk (13 to 14 ounce can)

    We loved the flavor!!. I used a large bag of mixed veggies-carrots, cauliflower and broccoli so had to up the broth and add a little more spice. I added a jalapeño instead of cayenne because I had one I used spinach instead of kale. Basically threw in all the veggies I had in the fridge Lemon juice really adds nice punch at the end. My husband had two bowls!!
