- 1 cup yellow onions (or coarsely chopped red, reserve some for garnish if desired, optional)

- 3 1/2 cups tomatoes (coarsely chopped ripe , or one 28-ounce can diced tomatoes)
- 14 oz. coconut milk
- 1 tsp. sea salt (or to taste)
- 1/2 cup chopped cilantro (coarsely, or parsley, optional, plus more for garnish if desired)
