- 1 yellow onion (or white, diced)
- 1 green bell pepper (finely diced)
- 1 jalapeno chile
- 2 tomatoes (chopped, or 1, 14.5oz, 411g can diced tomatoes)
- 1 Tbsp. red curry paste
- 1 tsp. salt
- 1 tsp. ground allspice
- 3/4 tsp. red pepper flakes
- 1/2 tsp. ground cumin
- 1/2 tsp. ground cinnamon
- 1/4 ground cloves (easpoon)
- 3 cups kidney beans (cooked, or 2 15 oz cans, drained & rinsed)
- 4 sweet potatoes (medium, peeled and cut into 1/2 inch cubes)
- 3 cups low sodium vegetable broth
- 1/2 bunch collard greens (or other greens, stemmed and cut into thin strips)
- 1 cup full fat coconut milk
- 1/4 cup scallions (chopped, green and white parts,plus more for topping)
