  • 1/4 cup long-grain rice
  • 1 teaspoon olive oil
  • 1/2 pound cod fillet (cut into cubes)
  • 1 tablespoon curry powder
  • 1/2 pound leeks (thinly sliced)
  • 1 cup chicken stock
  • fresh herbs (for garnish)

    Directions

    1. Cook the rice in boiling salted water for 20 mins. Drain the rice and set aside.
    2. Meanwhile, heat the oil in a saucepan and sauté the fish for 2 mins. Add the curry powder and season with salt. Add the leeks and cook for 2 mins. Pour in the stock and simmer over medium heat for 5 mins. Season. Add the rice and serve garnished with fresh herbs.
