- 1 Tbsp. olive oil
- 1 medium onion (diced)
- 2 cloves garlic (grated)
- 2 tsp. ginger (fresh grated)
- 1 1/2 tsp. cumin
- 1 tsp. curry powder
- 1/4 tsp. crushed red pepper flakes (more or less to taste)
- 1 bay leaf
- 4 cups vegetable stock
- 1 cup red lentils
- 1/2 sweet potato (medium-sized, peeled and cubed, about 8 oz or 1 c cubed)
- 2 leaves kale (washed, stem removed, and chopped, about 2-3 oz or 3-4 c chopped)
- 1 cup coconut milk (I used homemade, but canned is fine)
- 2 Tbsp. lemon juice
- salt
- pepper
- 2 Tbsp. honey roasted peanuts (coarsely chopped, for garnish, optional)
