- 1 serrano pepper (or green chili, seeded and roughly chopped)
- 1/4 cup apple cider vinegar (Nature’s Intent)
- 3 Tbsp. maple syrup
- 1 tsp. kosher salt
- 2 Tbsp. olive oil
- 1 onion (medium, diced, about 1 to 1 1/4 cups)
- 1 1/2 tsp. kosher salt (divided)
- 3 cloves garlic (minced)
- 1 Tbsp. minced ginger
- 1 serrano pepper ( thinly sliced)
- 1 large carrot (peeled and diced)
- 2 tsp. ground coriander
- 1 tsp. ground cumin
- 1/2 tsp. ground turmeric
- 2/3 cup diced tomatoes (fresh or from a can)
- 2 cans chickpeas (save the water from the can)
- coconut milk (1/4 cup, full fat)
- 2 Tbsp. apple cider vinegar (Nature’s Intent, optional)
