Curried Cauliflower with Cashews

  • 1 pound cauliflower (cut into florets)
  • 2 tablespoons peanut oil
  • 1 1/4 cups unsalted cashews
  • 1/2 teaspoon turmeric
  • 1 stalk lemongrass (white stem finely chopped)
  • 2 cloves garlic (minced)
  • 1 red chile (finely chopped)
  • 3/4 cup sugar snap peas (trimmed)
  • 2/3 cup basil

    Directions

    1. Bring a large saucepan of salted water to a boil over high heat. Blanch cauliflower 2–3 mins, until almost tender. Drain well and set aside.
    2. Heat oil in a wok or large skillet on high. Stir-fry nuts and turmeric 2–3 mins until nuts are lightly toasted.
    3. Add cauliflower, lemongrass, garlic, and chile and stir-fry 1–2 mins, until fragrant.
    4. Mix in peas. Stir-fry a further 1–2 mins. Add basil, tossing well. Serve with rice, if desired.
