- 2 Tbsp. pink peppercorns
- 2 Tbsp. coriander seeds
- 1 Tbsp. juniper berries
- 1 tsp. allspice berries
- 100 grams granulated sugar
- 75 grams sea salt
- 2 shots whisky
- 150 grams rye flour
- 100 grams spelt flour (wholemeal)
- 5 grams fresh yeast (or ½ tsp dried yeast)
- 300 mL sour cream
- 100 mL whole milk (50-)
- 2 medium eggs (beaten)
- 50 grams butter (melted)
- 1 tsp. baking powder
- 1/2 tsp. sea salt
- 75 grams fructose (fruit sugar, or 100g caster sugar)
- 150 mL white wine vinegar
- fennel bulb (thinly sliced or use a mandolin)
- fennel pollen (wild, to garnish, optional)
- sour cream (extra, or crème fraiche, to garnish)
