- 1 cucumber (large, peeled and cut into chunks)
- 3 cucumbers (smaller, peeled leaving stripes of skin, sliced into coins)
- 1/2 red onion (a medium, diced fine, to taste)
- 1 heirloom tomato (large ripe, mine was yellow and ruby pink gorgeous, seeded and diced)
- 1/4 cup champagne vinegar
- 1 Tbsp. balsamic vinegar
- 1 Tbsp. olive oil (good tasting)
- 2 tsp. agave nectar (raw organic, or more to taste)
- 1 pinch sea salt (or to taste, you can always add more- don't add too much)
- ground pepper (Fresh, to taste)
