- 2 cups lime juice (freshly squeezed, from about 16 limes; may use bottled organic lime juice, such as Santa Cruz Organic Pure Lime Juice)
- 1 bay leaf
- 1 clove garlic (crushed)
- 8 oz. whole dill pickles

- 2 Tbsp. yellow mustard
- 2 loaves bread (Cuban, cut in half horizontally, may substitute a soft Italian or French roll)
- 12 oz. ham (thinly sliced country-style)
- 6 oz. genoa salami (thinly sliced)
- 6 oz. swiss cheese (thinly sliced)
- 6 oz. provolone cheese (thinly sliced)
- 12 oz. boneless pork loin (thinly sliced, see above)
- 6 oz. pickle (and yellow mustard relish, see above)
