- 1/2 cup onion (minced, red is suggested, but I only had a yellow onion)
- 1 clove garlic (minced)
- 1 jalapeño (seeded and diced)
- 1 tsp. cumin
- 1 tsp. paprika
- 1/2 lime
- 4 Tbsp. cilantro (chopped)
- 6 oz. pepperjack cheese (grated, or cheddar, or Monterey jack - whatever you like!)
- 12 corn tortillas (mine were 6")
- olive oil (for cooking)
- salsa (optional)
- sour cream (optional)
- avocado (optional)
