- 1 lb. sausage (raw fennel, taken out of its casing)
- 1 tsp. red pepper flakes
- 1 onion (large, chopped into small pieces)
- 2 celery stalks (chopped into small pieces – and the leafy top’s!)
- 10 sage leaves (chopped fine)
- 1 pinch salt (and pepper, using three fingers to pinch the salt and pepper will get you perfect seasoning)
- 1 bunch kale (leafy, with the stems cut off, langostino kale or dark kale)
- 6 nutmeg (grates of, or 1/4 teaspoon already grated)
- 3 eggs
- 3 cups chicken stock (plus 1 extra if the stuffing is dry)
- fresh parsley (Handful of chopped)
- 1/2 stick salted butter (cut into small slices so it melts right in, and a little extra butter to grease the baking dish)
- 8 cups croutons (garlic)
- 6 cloves garlic (chopped into tiny pieces)
