- 240 mL sauce (mornay, warmed, recipe follows)
- 80 mL water (warm very, 43-46C)
- 7 grams active dry yeast (not quick-rising)
- 300 grams flour
- 65 grams caster sugar
- 2 1/2 tsp. fine sea salt
- 6 eggs (large at room temperature)
- 285 grams butter (unsalted cut into 2cm cubes, at room temperature, plus butter for the pans)
- 45 grams butter (unsalted)
- 80 grams Spanish onion (diced, 1cm)
