This recipe is great.
A few years ago I tried making croissants with a different recipe and after hours of prep work, they failed miserably (all the butter melted out and they became greasy puffs in a pool of butter...). Lesson learned: if you want to make croissants, make sure you do it right with a proper recipe.
This recipe is indeed tedious (proper French baking should be), but it produces amazing croissants. My wife was bragging on Instagram with pictures, so I'd say they turned out well.
