- 1 rump roast (about 2.5 pounds, trim visible fat if there is any)
- 1 Tbsp. rub (on roast before browning)
- 4 yellow onions (large, cut into slices at least 1/2 inch thick)
- 2 Tbsp. spanish paprika (or sweet Hungarian, or more)
- 1/2 tsp. Hungarian paprika (optional)

- 12 oz. roasted red bell peppers
- 14.5 oz. diced tomatoes with juice (I like petite dice for this)
- 2 cups homemade beef stock (or low-sodium beef broth)
- fresh ground black pepper (to taste)
- 1 1/2 cups sour cream (I used light sour cream, do not use fat free)

I actually did this on the stovetop but it was wonderful - a nice change from plain old pot roast It was amazing over home made biscuits!
