- 1 Tbsp. curry powder (I used Penzeys sweet curry powder)
- 1 sweet potato (large, peeled and cut into 1/2 inch dice)
- 1 1/2 cups red lentils
- 6 cups homemade chicken stock (or use 4 cans chicken broth)
- 1 can light coconut milk
- sea salt (to taste)
- fat free greek yogurt (or light sour cream, for serving, optional)
