- 1 red bell pepper (small, diced)
- 1/2 cup pearled barley (not quick cooking)
- 4 cloves garlic (minced)
- 2 Tbsp. honey
- 1 Tbsp. brown sugar
- 2 Tbsp. italian seasonings
- 1 bay leaf
- 4 cups vegetable broth (*not needed until day of cooking)
- 6 Tbsp. pesto (store-bought or homemade *not needed until day of cooking)

This soup was tasty! I've never had the Panera version but I assume its a lot saltier than mine. I only cooked it for 5 hours and I preferred the consistency, after 8 hours it was more like stew I used low sodium in the canned products, and substituted the spinach for kale (I prefer it in soup). I also do not think the pesto is needed but it is delicious with and without!
