- 1 lb. Italian turkey sausage (ground, — look for it sold ground in a package, or you can also squeeze it from the casings if links are your only option)
- 1 yellow onion (large, — chopped, about 2 cups)
- 1 fennel bulb (large, — chopped, about 2 cups)
- 3/4 tsp. kosher salt
- 1/2 tsp. freshly ground black pepper
- 2 Tbsp. tomato paste (unsalted, — I like to buy the kind in the tube so I can use it for several recipes over time)
- 3 cloves garlic (— minced, about 1 tablespoon)
- 3 large carrots (— chopped, about 1 1/2 cups)
- 6 cups low sodium chicken broth (— plus additional as needed)
- 15 oz. fire roasted diced tomatoes (in their juices)
- 2 tsp. Italian seasoning
- 4 cups dinosaur kale (or chopped stemmed curly, — about half of an 8- to 10-ounce bunch)
- 9 oz. BUITONI® 3-Cheese Tortellini
- 1 Tbsp. red wine vinegar
- 1/4 cup grated Parmesan cheese (finely)

Made this recipe for Sunday family dinner. It was a hit! Followed the recipe as it was; other than deglazing the dutch oven I cooked the onion, leeks and sausage in (there was flavor on the bottom of that pot and I wanted to capture it). Also, added a little more tortellini because I had a few more to serve, and wanted to stretch the number to serve.
The flavors are delicious! All my guest told me to added it into my meal rotation and/or make this again soon!
