- 2 cloves garlic (minced)
- 1 cup chicken stock (Swanson® Organic Free-Ranch, or broth)
- 2 cans cream style corn (14.75 ounces EACH)
- 14.75 oz. corn (fire-roasted, or regular canned corn or Mexicorn, this is what is pictured in the photos -- has the added red & green pepper)
- 15.5 oz. black beans (drained and rinsed)
- 4 oz. diced green chiles (fire-roasted)
- 2 tsp. chili powder (chipotle, regular chili powder also works)
- 1/2 tsp. paprika
- 1/4 tsp. ground cumin
- 2 cups colby (OR Monterey Jack Cheese freshly grated; not from a bag)
- 2 cups heavy cream (or half and half)
- salt

Fantastic!! Can’t wait to make it again!
Added:
- 1.5 bell peppers, diced small
- Chipotle chili flakes, instead of powder
- ~ 14 diced tomatoes with green chilies
- subbed 2 cups nonfat plain Greek yogurt combined with ~12oz of evaporated milk milk
- 1 cup shedded Pepper jack
- 1Cup of shredded cojack
Left out chicken for my vegetarian daughter, but added some for on the side use.
SO FILLING and full of protein, too. (With a little More Cheese, it would have been wonderful queso)

it was a pretty great meal and totally expensive. only thing I would change is I would grill and pull the chicken first instead of boiling it cause it was a little too squishy for me. The flavor was amazing though!

Really good! I did it on the stovetop and used leftover roasted chicken. I also sautéed an onion and garlic.

Great! I omitted the cream and cheese and added chorizo and more water and lots of my smoked chipotle hot sauce. Yummy!

Delicious. This is one of the family favorites. I would definitely make this again. It’s a great cold weather, crock pot option. Beware: this one has a lot of calories per serving

Excellent flavor profile! I searched high and low for a comfort food recipe which could be minimally tweaked to meet the gluten-free, dairy-free requirements of my guests, I omitted the creamed corn, chiles (ugh - kids) and the heavy cream. To make sure it was thick and chowdery, decreased the liquid slightly, and processed some frozen (thawed) corn in my food processor with a little corn starch. I served cheese on the side for those who could eat it, and we all ate in big bowls with crushed blue and white corn tortilla chips.

I added diced tomatoes with chilles...was a great addition... definitely a keeper
