- 2 bay leaves
- 12 oz. beer (i used pumpkin beer)
- 2 tsp. cider vinegar
- 2 tsp. worcestershire
- 28 oz. crushed tomatoes (1 can, fired roasted)
- 2 cans tomato paste (6 ounce)
- 4 cups pumpkin (fresh, diced, or 1 can pumpkin puree*)
- 14 oz. black beans (1 can, rinsed + drained, optional)
- shredded sharp cheddar cheese
- sour cream (or greek yogurt)
- cilantro (for topping)
- 2 Tbsp. butter
- 1 cup pumpkin seeds
- 2 Tbsp. brown sugar
- 1 tsp. canela
- salt (to taste)
