- 2 heads butter lettuce
- 1 apple (cut into matchsticks)

- 2 Tbsp. vegetable oil
- 1 onion (small, finely minced, approx 1/2 cup)
- 1 carrot (finely minced, approx 1/4 cup)
- 1 celery (finely minced, approx 1/4 cup)

- 1 cup quinoa (I used a mix of black and white quinoa)
- 3 Tbsp. chopped fresh herbs (finely, use any combination of parsley, thyme, chives, oregano, or mint)
