- 3/4 cup cornmeal
- 1 1/4 cups all purpose flour (I used Pamela's baking mix because we happen to be gluten-free)
- 1 cup milk (any variety is fine)
- 1/4 cup sugar
- 1 egg
- 1 tsp. baking powder (use even if your gluten-free mix contains baking powder; this helps with rising)
- 15 oz. black beans (drained and rinsed)
- 14.5 oz. fire roasted tomatoes
- 15 oz. corn (drained)
- 1 Tbsp. chili powder
- 1 tsp. cumin
- 1/2 tsp. paprika
- 1/4 cup diced onion (I had some leftover in the fridge from a previous dish)
- 1/2 cup shredded cheddar cheese

Not my favorite, but my husband really liked it. It was just a little boring for me. I was hoping for more depth of flavor. It was really easy to make, though.
