I made this in the instant pot and added dehydrated soy crumbles. I added an extra cup of veggie broth and extra salt to balance out the taste. We topped it with dairy free jack cheese, dairy free sour cream, green onions, and frito scooping chips from Trader Joes. This meal was healthy, hearty and delicious! I would definitely make it again.

Perfect! I now prefer this over traditional meat chili, and I’m a Texan! Chili is staple around here. If you need a crunch, use roasted pumpkin seeds in place of Fritos or crackers. I kicked up the cumin measurements to give it more pow. If you like mild to medium chili, the current measurements are just fine. I also substituted the black beans for dark red kidney beans. So I used two cans of light red, and one can of dark red.

I did not oove it. It smelled incredible, but the flavor was not chili-esque. It was hard to get down and quite boring. I'll be on the hunt for more robust recipes.

This was the first time I had ever tried to make chili and I was pretty proud! I took another reviewers advice by substituting stewed Italian seasoned tomatoes instead of the broth and adding vegetarian beef crumbles! I also added two extra jalapeños, extra chili powder, cayenne powder, garlic powder, cinnamon(trust me), and paprika in addition to what the recipe called for, for my taste. I eyeballed everything but, it turned out perfectly spiced and delicious! Super easy to do and definitely will be making again.

Was easy and tasty. Little more liquid would have been nice. I would probably chop the veggies smaller next time. Or partially mash the mixture. Served on baked potatoes.

Delicious! I love the added kick from the Jalapeño, and all the veggies made this super flavorful chili into a really healthy meal.

Delicious and easy to make! I add 2 cans of diced Italian stewed tomatoes instead of stock. I also add Morning Star crumblers for extra protein and to make it more like traditional chili!
