  • 2 tablespoons olive oil
  • 2 pounds lean ground beef (chicken, or other meat of your choice)
  • 2 cups white onion (chopped, in approximately 1/2-inch pieces)
  • kosher salt (to taste)
  • freshly ground black pepper (to taste)
  • 30 ounces low sodium pinto beans
  • 15 ounces red kidney beans (low sodium)
  • 15 ounces whole kernel corn (sweet)
  • 15 ounces stewed tomatoes (Mexican-style)
  • 15 ounces diced tomatoes
  • 10 ounces diced green chilies
  • 5 ounces pitted black olives (drained)
  • 1 package taco seasoning
  • 1 ounce ranch dip mix
  • sour cream
  • shredded cheddar
  • monterey jack cheese
  • sliced green onions
  • jalapeño peppers (Sliced fresh or pickled)
  • corn chips (optional)

    It’ turned out pretty good. I didn’t use olives and I only added jalapeños to my portion. I also used Cool Ranch Doritos.
    Husband loved it!! I did not add olives or green chilies

    Delicious! I didn’t use a crockpot. I added chicken broth and another package of taco seasoning.

    Super easy - I threw in extra meat and an extra can of Rotel tomatoes for the juice. I also added some leftover Mexican rice I'd made at the very end. Keith and the family loved it.

    Great! My whole family loved it. I used lime tortilla chip crumbles on top at the end and jalapeños for a little spice 😋

    Made this today and my 3 kids and husband loved it! The only thing I did different was add about 20 ounces of chicken broth since I threw out most of the juices in each can because of the salt content and preservatives. It was delicious! This recipe will be kept in rotation in my kitchen per everyone’s request. Thank you!
    It turned out good...we didn't care for the olives in it but other than thy it was good.

    This was so simple to make and it was absolutely delicious. I added just a little hot sauce while the soup was cooking in the crock pot. My wife loved it. He said this is a keeper. Kissed me on the side of the neck and well ...............................
