I didn’t use the tortillas in the recipe because I turned it into nachos and it was great. Melted some shredded cheese on the chips, then added the shredded beef mixture and topped with sour cream and guacamole.

My family loved this! I didn't cut the roast into chunks beforehand the second time I made it and it didn't make a difference.
