- 1 Vidalia onion (small sweet, diced small)
- 1/4 cup unsalted butter (half of 1 stick)

- 15 oz. tomato sauce (1 can, or tomato puree)
- 2 tsp. Garam Masala (for sauce)
- 2 tsp. ground coriander
- 1 tsp. cumin (for sauce)
- 1 tsp. smoked paprika (or regular paprika, for sauce)
- 1 tsp. kosher salt (or to taste, for sauce)
- 1/2 tsp. ground ginger (for sauce)
- 1/2 tsp. freshly ground black pepper (or to taste, for sauce)
- 1/2 tsp. cayenne pepper (optional, or to taste)
- 1/2 cup cream (or half-and-half, use a dairy-free milk if desired)
- 1/4 cup fresh cilantro (finely minced, divided for garnishing, optional)
