A great twist on tacos!
Ingredients

- 4 lb. pork loin roast
- 2 cans red enchilada sauce
- 2 cans tomatoes (with chillies)
- 1 green pepper
- 1 red pepper
- 1 yellow onion
- 1 tsp. cayenne
- 1 tsp. paprika
- 1 tsp. garlic salt
- 1 tsp. pepper
- 1/4 cup garlic (1 T per lb meat)

Directions
- Pour one (1) can of enchilada sauce into the crock pot, lay the roast in, and pour in the tomatoes for 8 hours on low.
- Saute the onion, peppers, and garlic for about 15 min over a medium heat.
- Add spices (can substitute taco seasoning) Pour vegetables over the roast when finished.
