This has quickly become a go-to recipe - very adaptable. I use a packet of Greek salad dressing rather than Italian - my husband is sensitive to garlic and onion which makes cooking tricky in general. The Greek dressing does include both on its ingredient list but they are more subtle in this recipe. It also gives a great and different flavor. We like the recipe best with a lighter hand on the lemon juice - a little goes a long way. I have served it over both rice and orzo. Another time I added Yukon Gold potatoes for the final two hours of cooking. All ways of serving it have been a hit. I add fresh dill when I have it and add veggies when the mood strikes. Mushrooms are always a good addition.
