- 4 boneless, skinless chicken breasts
- 1 bay leaf
- 1/3 cup shredded cheddar cheese (low fat white or yellow, plus more for serving)
- 1/4 cup heavy cream

Fantastic. Made it exactly as listed first time around it was delicious. Going to heat it up a bit today with some jalapeño and use pork instead of chicken just to play around. Highly recommen.

Easy and delicious.
I used mild enchilada sauce and it was the perfect level of spiciness for my kids. I added tortilla strips when I served it. Next time I may add some ditalini to make it even heartier.

This soup is the best one I’ve ever come across. My family asks for it again & again I highly recommend it! So easy too!
