These are my new "go to" sandwiches when my family's schedule doesn't allow for us to all eat together. I do make a short cut by dicing up a rotisserie chicken or purchasing diced rotisserie chicken from my local Costco. That way the chicken is already cooked and I toss them with the sauce ingredients right into the crockpot. My sandwiches are ready fairly quickly. My kids especially like that the sandwiches aren't super cheesy and gooey and I like that this is a pretty clean, healthy, recipe.
