- safflower oil (or Grapeseed, as needed)
- 16 oz. firm tofu (drained, patted dry, and cut into 1-inch cubes)
- 1/4 cup cornstarch
- fine sea salt (to taste)
- 3 Tbsp. unsalted butter
- 6 shallots (small, thinly sliced)
- 6 garlic cloves (grated on a Microplane or minced)
- 1 1/2 Tbsp. peeled fresh ginger (finely chopped)
- 1 serrano chile (green, seeded and thinly sliced)
- 1 red chile (fresh hot, seeded and thinly sliced)
- 3 Tbsp. soy sauce
- 2 Tbsp. molasses
- 2 tsp. freshly ground black pepper
- 1 lb. bok choy (or Swiss chard, stems and leaves separated and thinly sliced)
- 8 scallions (small, white and green parts, cut into 1¼-inch lengths)
