- 1 Tbsp. lime juice
- 4 cups cauliflower florets
- 2 tsp. seasoning (Thai, see below)
- 3 tortillas (medium/4 small, gluten-free if necessary)
- 3 cups purple cabbage (shredded)
- 1 carrot (shredded)
- 3 Tbsp. chopped cilantro (coarsely)
- 1 Tbsp. toasted coconut (flaked)
- 2 tsp. extra-virgin olive oil (each, and lime juice)
- 1 tsp. honey (or agave nectar to keep it vegan)
- 1 jalapeno pepper (thinly sliced)
- 1 avocado (ripe pitted)
- 1/2 cup chopped cilantro
- 1/4 cup water
- 2 limes (peeled, flesh only – take the skin and white bits off with a knife)
- 2 tsp. ground cumin
- 1 tsp. ground black pepper
- 1 tsp. paprika
- 1 tsp. chili powder
- 1 tsp. lemon zest (dried, or lemongrass)
- 1 tsp. garlic powder
- 1 tsp. onion powder
- 1 tsp. powdered ginger
- 1 tsp. ground coriander
- 3 pinches chili flakes (dried)
