- 1 can black beans (rinsed and drained)
- 1 green onion (finely sliced, white and green parts)
- 1/2 green pepper (or red, diced)
- 1/4 cup fresh cilantro (chopped)
- 1 lime
- 1/2 Tbsp. chili powder
- 1 tsp. ground cumin
- 1/2 tsp. garlic salt
- 2 cups shredded cheese (I use a combination of Monterey jack and sharp cheddar)

This was good although it took a couple of hours to put together. I didn’t use leftover plain chicken as the recipe suggested so I put together a southwest dry rub on two fresh chicken breasts, seared them off and shredded the chicken once the breasts rested. This yielded enough filling for 5 very large burritos
