- 1/2 cup flour
- 2 eggs
- 1 Tbsp. whole milk
- 1/2 cup breadcrumbs (and 1/2 c Panko breadcrumbs)
- 1 tsp. salt (each, black pepper, onion powder and chili powder)
- 3 Tbsp. olive oil (enough to generously coat the bottom of your pan)
- 4 tomatoes (Ripe, seeds removed and diced)
- 1/2 jalapeno (minced)
- 1/4 red onion (minced)
- 1 handful cilantro (chopped)
- 2 tsp. sea salt (or Kosher)
