- 2 cans sardines (King Oscar Skinless Boneless, in Olive Oil, drained)
- 1/4 cup olive oil
- 1 lemon
- 1 tsp. Dijon mustard
- 1/2 tsp. Old Bay Seasoning (Or 1/4 tsp kosher salt)
- cracked black pepper (to taste)
- 1 large egg (lightly beaten)
- 1 cup panko bread crumbs
- 1/2 cup mayonnaise
- 1/2 lemon juice (TBSP freshly squeezed, more to taste if needed)
- 1 1/2 dried tarragon (TBSP, You could use freshly chopped tarragon, but the flavor may not come through as strongly; add more as needed.)
- 4 French rolls (fresh, or hoagies)
- lettuce (sliced into ribbons)
- tomato slices
- bread and butter pickles
- dill pickle
- 4 butter (TBSP)
