- 8 oz. shiitake mushrooms
- 2 stalks lemon grass
- 1 qt. duck stock (homemade, or chicken stock will do!)
- soy sauce (to taste, I used 4 tablespoons)
- 1 Tbsp. mirin
- 2 shallots
- 2 cloves garlic
- 2 Tbsp. mi (shichi-, tōgarashi)
- 1 tsp. sesame seeds
- chili oil (to taste)
- 2 soft-boiled eggs
- 12 oz. ramen noodles (fresh, cooked according to package instructions)
- salt
- pepper
- 1/3 cup canola oil (plus 2 tablespoons, divided)
- 1 scallion
