Family loved this. I added in some ham amd made it a main course. My daughter is not normally a pork or cheese eater, but she almost ate it all herself.

Made this for a Boy Scout event. I added extra bacon and mixed some cheese with the mixture, then covered the top with remaining cheese.

I had leftover baked potatoes and not a lot of time so i cooked the bacon stove top and chopped the baked potatoes and cooked them at a high temp in the bacon fat til crispy. Then added back the bacon bits and green pepper and cheese, added some onion and garlic powder. Yum!!

So yummy! The potatoes got a bit crispy but that just added to the yumminess!

Took awhile to cook but it was worth it in the end however the bacon grease made me feel a little guilty.

We now have a thousand and one ways to make great potato meals. I did spice it up a little with some garlic salt, chilli powder, steak spice, etc.

absolutely fantastic! I love this dish, my mother makes it sometimes and makes it a great breakfist lunch or dinner. I am definitely eather making it again or recomendidng it to a friend or family member.

I make this all the time.. didnt realoze it was a recipe on here. However i dont put them in the oven. its all done on stove top. adding onion. I cook the bacon, then use the same skillet fry the potato for a flavored crust, then place lid on top cooking them slowly to soften them. add the cheese n bacon half way through, fry up a sunny side up egg on top or scramble on the side. garnish with sliced avocado or salsa or sour cream... a filling breakfast for the Mister.
also i sometimes let the potatoes sit in salt water for a bit and deep fry them but the size are hearty chunks.

it turned out really good, but i think the bake time could be decreased a little bit.
