- 1 lemon (zest of)
- 1 Tbsp. fresh squeezed lemon juice
- 1/2 tsp. baking soda
- 2 cups cilantro (chopped and firmly packed, depends how much you like cilantro!)
- 1/2 Tbsp. ground cumin
- 1/2 Tbsp. ground coriander
- 1/2 tsp. salt
- olive oil (light, or other neutral flavored oil for greasing)
- lettuce (or leafy greens for wraffing)
- sauce (Your favorite falafel, or dip)
- toasted sesame seeds (for sprinkling, optional)
