- 1/3 cup green onions (very finely chopped)
- 1 Tbsp. coconut oil (warmed, or vegetable oil)
- 2 tsp. curry powder (Use the heat level you prefer--I used medium heat)
- 1 tsp. ground cumin
- 3/4 tsp. fine sea salt
- 1 tsp. baking powder
- 1/3 cup quick-cooking rolled oats (gluten-free, if needed)

Followed directions exactly, but there’s no binder to hold it together—they did not cohere into patties at all. Just a pile of grains that dissolved back into crumbs when I tried to “flip” them. I ended up using the baked mixture as a crumbly salad topping!
Still looking for a way to love amaranth, but this isn’t it.

Hmmmm .... I think I need to make a again bc the amaranth was a bit raw (crunchy). Maybe I needed to soak them before cooking
